About organic ham and sodium nitrate
is it possible to buy organic ham without the sodium nitrates and all the other bumph that you get with pre cooked ham?

Organic pork certification legally allows the use of sodium nitrate, which is known as salt peter. It's something that's been added to ham and bacon for centuries, so is allowed despite the fact that it's not good for you. If you want to avoid salt peter in your ham, go for biodynamically produced pork products or organic pork products from the excellent Swaddles Green Farm.
