Oils for Deep Frying
Hi there... I am so confused and utterly blind from reading labels!!
My husband and I try to take the organic option wherever possible
in all our food choices. Naturally we come off the rails
occassionally and fancy an organic beef steak and a modest portion
of organic chips.
I am now getting very bogged down with my choice of oils for
cooking with (especially deep frying and roasting - as in roast
potatoes)
I understand that organic produce cannot contain trans or
hydrogenated fats by law (thanks to your fabulous website) but
what is the safest oil for deep frying? I am lead to believe that
some oils are dangerous at high temperatures and start releasing
all sorts of undesirable chemicals too.
Please can you help?

Hi Jane,
You need to choose a high oleic organic vegetable oil for deep frying. This means that the oil has a higher smoking point than a low oleic oil. High oleic oils are labeled as "high heat", and that's the best way of choosing them.
I'm unable to suggest a particular plant oil to you, as they vary from variety to variety. For example, you can find high oleic sunflower oil, but you can also find medium heat sunflower oils.
