I am a nutty wood oven baker stuck in the middle of nowhere in Scotland. I make sourdoughs and other breads, but cannot find a source of Organic yeast – Any chance that you can help?
I will be running some small (and very informal) wood oven baking courses next year and it would be nice to be able to show that `quicker` 100% organic breads can be made without having to use manufactured yeast

Okay, yeast. There’s no such thing as organic yeast. It’s uncertifiable as organic because it’s a micro-organism.
All there is to choose from are the different kinds of easy-blend and fast-bake sorts of dried yeast preparations, and old-fashioned squidgy cubes of fresh yeast that needs to be stored in the fridge. But none of them can bear an organic logo.
